For the Brownies:
- 1 box (15.25 oz) strawberry cake mix (Pillsbury recommended)
- 2 large eggs
- ⅓ cup (80ml) vegetable or canola oil
- 1 tsp (5ml) vanilla extract
For the Glaze:
- ¾ cup (90g) powdered sugar
- 2 tbsp (40g) strawberry preserves (Bonne Maman recommended)
- 1½ tbsp (22ml) milk
- 1 tbsp (15g) cream cheese (optional, for extra creaminess)
Instructions
- Preheat oven to 350°F (175°C).
- Prepare the pan: Lightly grease an 8×8-inch baking dish or line it with parchment paper.
- Mix the batter: In a large bowl, combine the strawberry cake mix, eggs, oil, and vanilla extract. Stir until well blended.
- Bake: Spread the batter evenly into the pan. Bake for 18-22 minutes, or until a toothpick comes out clean. Let cool completely.
Make the Glaze:
- In a small bowl, whisk together powdered sugar, strawberry preserves, milk, and cream cheese (if using) until smooth.
- Spread the glaze over the cooled brownies.
- Slice & serve!
Notes
- Use Pillsbury strawberry cake mix for the best flavor.
- For extra richness, add 1 tablespoon of cream cheese to the glaze.
- Let the brownies cool completely before frosting to prevent melting.
- Store in the fridge if using the glaze (due to milk and jam).
