Ingredients

1 everything bagel (or your fave sturdy bagel)

2 large eggs

2 slices bacon (or turkey/veggie bacon)

1 slice cheddar or provolone cheese

1–2 tbsp whipped cream cheese (or softened regular)

Pinch salt & pepper

Optional: chives, hot sauce, avocado, fresh spinach
Instructions
1️⃣ Toast bagel halves until golden and crunchy.
2️⃣ Cook bacon in a cold skillet over medium heat until crisp, 3–5 mins per side. Drain on paper towels.
3️⃣ Crack eggs in a bowl, season, whisk well. In the same pan (hello, bacon flavor!), add a little fat. Pour in eggs on medium-low. Let sit 10 secs, gently fold until fluffy and just set.
4️⃣ Place cheese on hot eggs to melt.
5️⃣ Spread cream cheese on both bagel halves. Stack eggs + cheese, bacon, extra toppings if you like. Cap it off with the top bagel half.
