Ingredients

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • ½ tsp salt

  • 1 cup granulated sugar

  • ½ cup softened butter (or coconut oil!)

  • 2 large eggs

  • 1 cup mashed ripe bananas (about 2 large; black-speckled = best!)

  • ¼ cup milk (any kind)

  • 1 tsp vanilla extract

  • Cinnamon-sugar topping: 3 tbsp sugar + 1 tbsp cinnamon


Instructions

  1. Preheat & Prep

    • Oven to 350°F (175°C). Grease + line a 9×5 loaf pan.

  2. Dry Mix

    • Whisk flour, baking soda, cinnamon, and salt. Set aside.

  3. Cream Butter & Sugar

    • Beat butter and sugar 2–3 mins until pale and fluffy.

  4. Add Eggs, Banana, Milk & Vanilla

    • Mix in eggs one at a time, then bananas, milk, and vanilla.

  5. Fold in Dry

    • Add dry ingredients on low, mixing just until the last streak disappears. Lumps = okay!

  6. Pan It & Top It

    • Pour batter into pan. Sprinkle cinnamon sugar on top and press lightly.

  7. Bake & Test

    • Bake 50–60 mins. At 50 mins, test doneness—should yield moist crumbs. Tent with foil if browning too fast.

  8. Cool Properly

    • Cool 15 mins in the pan, then lift out onto a wire rack. Let cool at least 1 hour before slicing.

Notes

  • Use very ripe bananas for moisture & flavor

  • Don’t overmix—fold gently for a tender crumb

  • Cool completely to avoid gummy texture

  • If it sinks, it’s still delicious—embrace the rustic vibe!
