1.5 lbs beef chuck roast or stew meat, cut into 1-inch pieces
1 lb baby potatoes, halved or quartered
4 tbsp unsalted butter, melted
4 garlic cloves, minced
1 tbsp olive oil
1 tsp dried thyme
1 tsp dried rosemary
1 tsp smoked paprika
1/2 tsp onion powder
Salt and pepper, to taste
1/4 cup beef broth
2 tbsp fresh parsley, chopped (for garnish)
Sear the Beef (Optional):
Heat olive oil in a skillet over medium-high. Brown beef pieces for 2–3 minutes per side. Move to slow cooker.
Make Garlic Butter Sauce:
Mix melted butter with garlic, thyme, rosemary, paprika, onion powder, salt, and pepper.
Layer in the Slow Cooker:
Add potatoes to the bottom. Pour half the garlic butter sauce. Add beef, then the rest of the sauce and beef broth.
Slow Cook:
Cover and cook on low for 6–8 hours or high for 3–4 hours, until beef is tender and potatoes are soft.
Finish & Serve:
Gently stir everything. Garnish with parsley and serve warm.
Toss in carrots or green beans for extra color and vitamins.
For a thicker sauce, mix 1 tbsp cornstarch with 1 tbsp water, simmer separately, then pour back in.
