Spicy fluffy eggs, salty prosciutto, creamy avocado, melty cheddar, and a swipe of smoky-sweet roasted red pepper hummus—wrapped up tight in a warm whole-grain tortilla, crisped to golden perfection. Ready in under 15 minutes, this wrap turns Monday chaos into a pocket of delicious calm.


Ingredients

  • 1 large whole-grain tortilla (burrito-size)

  • 2 large eggs

  • Pinch black pepper & pinch cayenne (optional)

  • 2 slices prosciutto (or crispy bacon, deli ham, or sautéed mushrooms)

  • ¼ ripe avocado, sliced

  • 2 tbsp shredded cheddar (or your fave melty cheese)

  • 12 tbsp roasted red pepper hummus (the secret star!)


Instructions

1️⃣ Scramble Eggs: Whisk eggs with black pepper & cayenne. Cook gently on medium-low heat, stirring softly until fluffy but slightly moist. Remove from heat.
2️⃣ Warm Tortilla: Toast tortilla in a dry skillet 20 secs per side until flexible (or microwave 15 secs wrapped in a damp towel).
3️⃣ Assemble: Spread hummus over center of warm tortilla. Layer on scrambled eggs, prosciutto, avocado, and cheese.
4️⃣ Roll & Seal: Fold bottom up, tuck sides in, roll tight. Toast seam-side down in skillet 1–2 mins per side until golden and sealed.
