  • 1 lb lean ground beef (or turkey/lentils)

  • 2 medium onions, chopped

  • 1½ cups finely chopped carrots

  • 2 cups thick mashed potatoes (leftover or dry!)

  • ¼ cup beef broth

  • 1 tsp rubbed sage

  • ½ tsp dried thyme

  • ½ tsp marjoram (or oregano)

  • ¾ tsp salt + ½ tsp black pepper

  • 1 sheet refrigerated pie crust, thawed

  • 1 egg, beaten (optional, for golden tops)


Instructions

  • Preheat oven to 400°F (375°F if using a dark pan).

  • Brown beef + onions in a skillet. Let crisp slightly, then drain.

  • Add carrots, mashed potatoes, broth, spices. Cook 5–7 mins, stirring. Cool 10 mins.

  • Roll crust on floured surface. Cut into 4 rectangles or 6 circles.

  • Fill & seal: Place ⅓ cup filling on half, moisten edges, fold, and crimp with a fork.

  • Chill 10 mins, then brush with egg wash.

  • Bake 18–22 mins until deep golden and hollow-sounding when tapped. Cool 5 mins.

Notes

  • Try adding peas, celery, or cheese to the filling

  • Wrap cooled pies in parchment—they stay crisp longer

  • Freeze before baking—bake straight from frozen (add 5 mins)
