1½ cups finely chopped carrots
-
2 cups thick mashed potatoes (leftover or dry!)
-
¼ cup beef broth
-
1 tsp rubbed sage
-
½ tsp dried thyme
-
½ tsp marjoram (or oregano)
-
¾ tsp salt + ½ tsp black pepper
-
1 sheet refrigerated pie crust, thawed
-
1 egg, beaten (optional, for golden tops)
Instructions
-
Preheat oven to 400°F (375°F if using a dark pan).
-
Brown beef + onions in a skillet. Let crisp slightly, then drain.
-
Add carrots, mashed potatoes, broth, spices. Cook 5–7 mins, stirring. Cool 10 mins.
-
Roll crust on floured surface. Cut into 4 rectangles or 6 circles.
-
Fill & seal: Place ⅓ cup filling on half, moisten edges, fold, and crimp with a fork.
-
Chill 10 mins, then brush with egg wash.
-
Bake 18–22 mins until deep golden and hollow-sounding when tapped. Cool 5 mins.
Notes
-
Try adding peas, celery, or cheese to the filling
-
Wrap cooled pies in parchment—they stay crisp longer
-
