Tender chicken, warm spices, sweet apricots and raisins, and toasty almonds dance in a golden, fragrant broth. Inspired by Grandma Amina’s Casablanca magic and lovingly simmered in a regular pot, this dish brings comfort, conversation, and just the right amount of sparkle. One pot, endless soul—and yes, your house will smell like a spice market in heaven.
Ingredients

1.5 kg chicken (bone-in pieces)

4 onions, sliced

2 garlic cloves, minced

1 bouquet garni (parsley, thyme, bay leaf)

1 tsp coriander seeds (or ¾ tsp ground)

1 tsp ground cumin

1 cinnamon stick

Pinch of ground nutmeg

1.2 kg carrots, cut into sticks

100 g raisins (plumped in warm water)

100 g blanched almonds (toasted)

6 dried apricots, halved

500 ml chicken broth

5 tbsp olive oil

Salt & pepper
Instructions

Brown chicken in hot oil. Set aside.

Sauté onions and garlic. Add spices and bouquet garni.

Return chicken, add carrots, fruit, almonds (reserve some for topping), broth, salt & pepper.

Simmer covered on low 1 hr 15 mins.

Optional: Reduce sauce uncovered 5-8 mins for thickness.
Notes
Serve with couscous or crusty bread. Garnish with toasted almonds and herbs.
