Ingredients

1 lb ground turkey (or sausage, mushrooms, or tofu)

1 tbsp olive or avocado oil

1 tbsp each dried rosemary & oregano

1 tsp salt + ½ tsp black pepper

¼ tsp paprika or smoked paprika

½ small Spanish onion, diced
-
½ each red, orange, and green bell pepper, diced (or frozen mix)

1 garlic clove, minced

12 large eggs, beaten
-
½ cup dairy-free milk (coconut or almond)

8 oz farmer cheese (optional)

8 oz shredded cheddar or cheese of choice
Instructions

Preheat oven to 350°F (175°C). Grease a 9×13” baking dish.

Cook turkey in olive oil until browned. Drain excess fat.

Add herbs, spices, onion, bell peppers, and garlic. Sauté 5 mins. Let cool slightly.

In a bowl, whisk eggs and milk, fold in cheese.

Stir in cooled turkey-veggie mix. Pour into baking dish.

Optional Overnight Step: Cover and refrigerate 8+ hours.

Bake uncovered for 45 mins until set and golden. Rest 10 mins before slicing.
