Ingredients

  • 28 oz turkey kielbasa, sliced diagonally

  • 2 lbs asparagus, woody ends snapped

  • 3 cups grape tomatoes, halved

  • 2 large orange bell peppers, sliced

  • 4 tbsp olive oil

  • 1½ tsp sea salt

  • 1½ tsp Italian seasoning

  • 1 tsp paprika

  • 1 tsp garlic powder

  • ½ tsp black pepper

Swaps: Chicken sausage, green beans, zucchini, carrots, Cajun spice blend


Instructions

  1. Preheat oven to 400°F (200°C). Line 1–2 sheet pans with parchment.

  2. Toss all ingredients in a large bowl. Use your hands—coat every piece!

  3. Spread in a single layer (use 2 pans if needed). Kielbasa cut-side down = crispy gold.

  4. Roast 20–25 mins, stirring at 10 mins. Look for blistered tomatoes and golden kielbasa edges.

  5. Serve straight from the pan, or pile into bowls. Finish with lemon zest or fresh herbs if you’re feelin’ fancy.
