For the Chicken & Asparagus:

  • 3 boneless, skinless chicken breasts, cut into bite-sized chunks
  • 2 bunches asparagus, rinsed and trimmed
  • 1/2 cup butter, softened (divided)
  • 1 tsp olive oil
  • 2 tsp minced garlic
  • 1 tsp Italian seasoning
  • 1 tbsp hot sauce (optional, like Sriracha)
  • 1/2 cup chicken stock
  • 1/2 lemon, juiced
  • 1 tbsp fresh parsley, minced
  • Red chili flakes (optional, for heat)
  • Lemon slices (for garnish)
  • Salt & pepper to taste

Instructions

1. Prep the Chicken & Asparagus

  • Cut chicken into bite-sized pieces and season with salt, pepper, and onion powder. Set aside.
  • Blanch asparagus (optional for thicker spears):
    • Boil water, add asparagus for 2 minutes, then transfer to ice water to stop cooking. Drain and set aside. (Skip if using thin asparagus.)

2. Cook the Chicken

  • Heat 1/4 cup butter + olive oil in a large skillet over medium heat.
  • Cook chicken in batches until golden brown (about 4-5 min per batch).
  • Add 1 tsp garlic & Italian seasoning, stir for 30 sec until fragrant. Remove chicken and set aside.

3. Make the Garlic Butter Sauce

  • In the same skillet, add remaining garlic and sauté for 30 sec.
  • Pour in chicken stock, simmer until reduced by half.
  • Stir in remaining butter, lemon juice, hot sauce, and parsley.

4. Combine & Serve

  • Add asparagus, toss for 2 minutes until tender-crisp.
  • Return chicken to skillet, stir for 1 minute to coat in sauce.
  • Garnish with parsley, chili flakes, and lemon slices.
