Bang Bang Sauce:

  • ½ cup mayonnaise
  • ¼ cup chili-garlic sauce
  • 1 tablespoon honey
  • 2 teaspoons sriracha
  • 1 teaspoon paprika
  • 1 teaspoon lemon juice
  • Black pepper, to taste
  • Salt, to taste

Bang Bang Chicken:

  • 1 lb chicken breast, cut into bite-sized pieces
  • ¾ cup cornstarch
  • ½ cup buttermilk
  • 1 tablespoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • Vegetable oil, for frying
  • Spicy chili flakes (optional, for garnish)
  • Fresh chopped parsley (optional, for garnish)

Instructions

1. Prepare the Bang Bang Sauce:

  • In a small bowl, mix all sauce ingredients (mayonnaise, chili-garlic sauce, honey, sriracha, paprika, lemon juice, salt, and pepper) until smooth.
  • Refrigerate until ready to use.

2. Fry the Chicken:

  • Heat 2 inches of vegetable oil in a deep pot or skillet to 375°F (190°C).
  • In a large bowl, soak the chicken pieces in buttermilk while the oil heats.
  • In another bowl, whisk together cornstarch, paprika, salt, and black pepper.
  • Drain the chicken from the buttermilk, shaking off excess, then coat evenly in the cornstarch mixture.
  • Fry the chicken in batches for 2-3 minutes per side until golden brown and cooked through (internal temp should be 165°F/74°C).
  • Drain on paper towels to remove excess oil.

3. Toss & Serve:

  • Toss the fried chicken in the prepared Bang Bang sauce until fully coated.
  • Garnish with chili flakes and fresh parsley (if using).
  • Serve immediately while crispy!

Notes

✔ For extra crispy chicken, double-fry the pieces (fry once, let rest, then fry again).
✔ Adjust the spiciness by increasing or decreasing the sriracha and chili-garlic sauce.
✔ If you don’t have buttermilk, mix ½ cup milk with ½ tablespoon lemon juice or vinegar and let it sit for 5 minutes.
✔ For a healthier version, air-fry or bake the chicken instead of deep-frying.
