Ingredients

  • 1 lb ground beef (or turkey/mushrooms)

  • 8 oz bowtie (farfalle) pasta

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 cup beef broth

  • 1 cup heavy cream

  • 1 cup shredded cheddar cheese

  • ½ cup grated Parmesan

  • Salt & pepper to taste

  • Optional: fresh parsley for garnish


Instructions

  1. Cook pasta al dente in salted water. Drain, toss with a little oil, and set aside. Reserve ½ cup pasta water.

  2. In a deep skillet, heat olive oil over medium. Sauté onion and garlic 3–4 mins.

  3. Add ground beef, brown well, and drain most of the fat.

  4. Stir in broth and cream. Simmer 3–4 mins.

  5. Add cooked pasta, cheeses, and stir over low heat until melted and creamy. Adjust with pasta water if needed.

Notes

  • Add a pinch of nutmeg to elevate the sauce.

  • Cook pasta while browning beef to save time.

  • Low and slow when adding cheese = smooth sauce!
