Description

Tired of plain, boring rice? Let’s turn it into a vibrant, citrusy side dish that steals the show! This Cilantro Lime Rice is fluffy, fragrant, and packed with fresh flavors—perfect for tacos, burrito bowls, or grilled meats. With a few simple tricks, you’ll have restaurant-quality rice in under 30 minutes!


Ingredients

  • 1 tbsp olive oil (or butter for richness)

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 1 cup jasmine rice (rinsed & drained)

  • 2 cups low-sodium chicken or veggie broth

  • Juice & zest of 1–2 limes (about 2 tbsp juice)

  • ½ cup fresh cilantro, finely chopped

  • ½ tsp salt (adjust to taste)

  • 1 tbsp butter (optional, for extra richness)


Instructions

1️⃣ Sauté the Aromatics (5 mins)

  • Heat olive oil in a saucepan over medium heat.

  • Add onion and cook until soft (~3 mins).

  • Stir in garlic and cook for 30 seconds (don’t let it burn!).

2️⃣ Toast the Rice (2 mins)

  • Add rinsed rice and stir for 1–2 mins until lightly golden.

3️⃣ Cook the Rice (15 mins)

  • Pour in broth and salt. Bring to a boil.

  • Cover, reduce heat to low, and simmer for 15 mins (NO peeking!).

  • Remove from heat and let sit 5 mins (steam finishes cooking).

4️⃣ Fluff & Season (2 mins)

  • Gently fold in lime zest, juice, cilantro, and butter (if using).

  • Taste and adjust salt/lime as needed.

Notes

✔ Rinse the rice! Removes excess starch for fluffier grains.
✔ Toast the rice = nutty flavor + prevents mushiness.
✔ Add lime OFF heat for maximum zing (cooking dulls citrus).
✔ Hate cilantro? Swap with parsley or basil.
