Ingredients
-
1 tbsp olive oil (or butter for richness)
-
1 small onion, finely diced
-
2 cloves garlic, minced
-
1 cup jasmine rice (rinsed & drained)
-
2 cups low-sodium chicken or veggie broth
-
Juice & zest of 1–2 limes (about 2 tbsp juice)
-
½ cup fresh cilantro, finely chopped
-
½ tsp salt (adjust to taste)
-
1 tbsp butter (optional, for extra richness)
Instructions
1️⃣ Sauté the Aromatics (5 mins)
-
Heat olive oil in a saucepan over medium heat.
-
Add onion and cook until soft (~3 mins).
-
Stir in garlic and cook for 30 seconds (don’t let it burn!).
2️⃣ Toast the Rice (2 mins)
-
Add rinsed rice and stir for 1–2 mins until lightly golden.
3️⃣ Cook the Rice (15 mins)
-
Pour in broth and salt. Bring to a boil.
-
Cover, reduce heat to low, and simmer for 15 mins (NO peeking!).
-
Remove from heat and let sit 5 mins (steam finishes cooking).
4️⃣ Fluff & Season (2 mins)
-
Gently fold in lime zest, juice, cilantro, and butter (if using).
-
Taste and adjust salt/lime as needed.
Notes
✔ Rinse the rice! Removes excess starch for fluffier grains.
✔ Toast the rice = nutty flavor + prevents mushiness.
✔ Add lime OFF heat for maximum zing (cooking dulls citrus).
✔ Hate cilantro? Swap with parsley or basil.
