  • 3 Large Chicken Breasts, halved lengthwise

  • Salt & Pepper, to taste

  • 1 tbsp Olive Oil + 4 tbsp Butter (divided)

  • ½ cup All-Purpose Flour (plus 2 tbsp for sauce)

  • 8 oz Cremini Mushrooms, sliced

  • 2 Garlic Cloves, minced

  • ½ cup Dry Sherry (or white wine/chicken broth + 1 tsp lemon juice)

  • 1½ cups Heavy Cream

  • 6 Slices Muenster Cheese


Instructions

  1. Prep Chicken: Season chicken with salt & pepper. Dredge lightly in flour, shaking off excess.

  2. Sear Chicken: In a large skillet, heat olive oil + 2 tbsp butter over medium-high. Sear chicken 3–4 mins per side until golden (not cooked through). Remove to plate.

  3. Sauté Mushrooms: Melt remaining butter in the same pan. Cook mushrooms 5–7 mins until browned. Stir in garlic; cook 1 min.

  4. Make Roux: Sprinkle in 2 tbsp flour, stir 1 min to cook off raw taste.

  5. Deglaze with Sherry: Pour in sherry, scraping up browned bits. Simmer 1 min.

  6. Add Cream: Whisk in cream. Simmer 3–5 mins until thick enough to coat a spoon.

  7. Return Chicken: Nestle chicken into sauce, spooning mushrooms over top. Lay cheese slices over each piece.

  8. Finish Cooking: Cover, reduce heat to low, and simmer 10–15 mins until chicken is cooked through and cheese is melty.

Notes

  • Don’t skip searing—it adds flavor and seals in juices!

  • Use a meat thermometer (165°F = perfection).

  • No Muenster? Swiss, provolone, or Gouda melt beautifully too.
