Ingredients

2 (9 oz) packs cheese tortellini (fresh or frozen)

4 tbsp olive oil

1 lb Italian sausage (sweet or spicy), casings removed

1 cup chopped onion

6 cups (48 oz) jarred tomato sauce

½ cup fresh parsley, chopped

1 tsp salt + 1 tsp black pepper

2 cups shredded mozzarella
-
4 tbsp grated Parmesan
Optional Flavor Boost: 1 tbsp balsamic vinegar, 3 cloves garlic (minced)
Instructions

Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.

Cook tortellini 1–2 mins less than package suggests. Drain and rinse with cold water.

Sauté sausage in olive oil until browned (5–7 mins). Add onion, cook 4 mins more.

Add sauce, parsley, salt & pepper. Simmer 5 mins. Taste and adjust seasoning.

Mix in tortellini gently to coat. Transfer to baking dish.

Top with mozzarella and Parmesan.

Bake uncovered 20–25 mins until bubbly and golden. Rest 5 mins before serving.
