Say hello to your new weeknight go-to. This hearty, crowd-pleasing bake wraps cheesy tortellini in a rich tomato sauce, savory sausage, and bubbling layers of mozzarella and Parmesan. It’s easy, cozy, and tastes like a million bucks with zero stress. Perfect for potlucks, Netflix nights, or just when your soul needs cheese therapy.


Ingredients

  • 2 (9 oz) packs cheese tortellini (fresh or frozen)

  • 4 tbsp olive oil

  • 1 lb Italian sausage (sweet or spicy), casings removed

  • 1 cup chopped onion

  • 6 cups (48 oz) jarred tomato sauce

  • ½ cup fresh parsley, chopped

  • 1 tsp salt + 1 tsp black pepper

  • 2 cups shredded mozzarella

  • 4 tbsp grated Parmesan

Optional Flavor Boost: 1 tbsp balsamic vinegar, 3 cloves garlic (minced)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.

  2. Cook tortellini 1–2 mins less than package suggests. Drain and rinse with cold water.

  3. Sauté sausage in olive oil until browned (5–7 mins). Add onion, cook 4 mins more.

  4. Add sauce, parsley, salt & pepper. Simmer 5 mins. Taste and adjust seasoning.

  5. Mix in tortellini gently to coat. Transfer to baking dish.

  6. Top with mozzarella and Parmesan.

  7. Bake uncovered 20–25 mins until bubbly and golden. Rest 5 mins before serving.

Notes

For dreamy leftovers, reheat in the oven covered with foil at 350°F. Or freeze unbaked for later—just add 20 extra mins to bake time.
