Cajun Sausage and Rice Skillet

This one-pan meal is bursting with smoky, spicy Cajun flavors and comes together in just 30 minutes! Perfect for busy weeknights, it combines juicy smoked sausage, tender rice, and colorful bell peppers in a richly seasoned dish.

  • 12 oz smoked sausage (Andouille or Kielbasa), sliced into ½-inch rounds
  • 1 cup long-grain white rice, rinsed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 ½ cups chicken broth
  • 2 tbsp Cajun seasoning (adjust to taste)
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Garnish (optional): Fresh parsley, green onions, hot sauce

Instructions

1️⃣ Prep Ingredients

  • Slice sausage, dice bell peppers and onion, and mince garlic. Rinse rice until water runs clear.

2️⃣ Brown the Sausage

  • Heat olive oil in a large skillet over medium heat. Add sausage and cook for 5–7 minutes until browned. Remove and set aside.

3️⃣ Sauté Veggies

  • In the same skillet, add onion and bell peppers. Cook for 3 minutes until soft. Add garlic and cook for 1 minute until fragrant.

4️⃣ Toast the Rice

  • Stir in rinsed rice and cook for 2 minutes, coating it with the oil and veggies.

5️⃣ Simmer

  • Pour in chicken broth and Cajun seasoning. Bring to a boil, then reduce heat to low, cover, and simmer for 15–20 minutes until rice is tender.

6️⃣ Combine & Serve

  • Return sausage to the skillet. Stir and cook for 3–5 more minutes. Garnish with parsley, green onions, and hot sauce if desired.

Notes

  • For extra heat, add a pinch of cayenne pepper or extra Cajun seasoning.
  • Use Andouille sausage for authentic Cajun flavor, or Kielbasa for a milder taste.
  • Rinse the rice to remove excess starch and prevent clumping.
  • Substitute chicken broth with vegetable broth for a lighter version.
