- 12 oz smoked sausage (Andouille or Kielbasa), sliced into ½-inch rounds
- 1 cupĀ long-grain white rice, rinsed
- 1Ā red bell pepper, diced
- 1Ā green bell pepper, diced

- 3 clovesĀ garlic, minced
- 1 ½ cups chicken broth
- 2 tbspĀ Cajun seasoningĀ (adjust to taste)

- Salt & pepper to taste

- Slice sausage, dice bell peppers and onion, and mince garlic. Rinse rice until water runs clear.
2ļøā£Ā Brown the Sausage
- Heat olive oil in a large skillet overĀ medium heat. Add sausage and cook forĀ 5ā7 minutesĀ until browned. Remove and set aside.
3ļøā£Ā SautĆ© Veggies
- In the same skillet, add onion and bell peppers. Cook forĀ 3 minutesĀ until soft. Add garlic and cook forĀ 1 minuteĀ until fragrant.
4ļøā£Ā Toast the Rice
- Stir in rinsed rice and cook forĀ 2 minutes, coating it with the oil and veggies.
5ļøā£Ā Simmer
- Pour in chicken broth and Cajun seasoning. Bring to aĀ boil, then reduce heat toĀ low, cover, and simmer forĀ 15ā20 minutesĀ until rice is tender.
6ļøā£Ā Combine & Serve
- Return sausage to the skillet. Stir and cook forĀ 3ā5 more minutes. Garnish with parsley, green onions, and hot sauce if desired.
Notes
- For extra heat, add a pinch of cayenne pepper or extra Cajun seasoning.
- UseĀ Andouille sausageĀ for authentic Cajun flavor, or Kielbasa for a milder taste.
- Rinse the rice to remove excess starch and prevent clumping.
