2 cups cooked, chilled white rice

Instructions

Sauté the trinity (onion, bell pepper, celery) in olive oil over med-high heat for 5 mins. Season with salt.

Add beef, brown it thoroughly (6 mins), then stir in garlic and cook 1 min more.

Fold in day-old rice, cooking 2–3 mins until heated through and evenly colored.
