Ingredients

1 large burrito tortilla (10–12 inch, flour or GF)

2 eggs + 2 egg whites (or 3 whole eggs)

½ cup cooked shredded hash browns

¼ cup diced bell peppers + onions

¼ cup shredded sharp cheddar (or your fave melty cheese)

½ tsp Everything Bagel Seasoning (store-bought or DIY)

Optional: Salsa or hot sauce for drizzling
Instructions
1️⃣ Sauté peppers & onions in a non-stick skillet over medium heat for 3–4 mins until soft & golden. Remove & set aside.
2️⃣ In the same skillet, cook hash browns with a tiny oil drizzle until golden & crispy on both sides (about 6–7 mins). Season with salt & pepper.
3️⃣ Whisk eggs + whites, season lightly, scramble gently in the skillet on medium-low heat until fluffy & just set—remove from heat while slightly moist.
4️⃣ Warm tortilla in microwave 15 secs or dry skillet 20 secs/side.
5️⃣ Layer eggs in center of tortilla, top with veggies, crispy hash browns, cheese & Everything Bagel Seasoning. Drizzle salsa if you like.
6️⃣ Fold bottom up, tuck in sides, roll tightly. Toast seam-side down in skillet for 1–2 mins to seal.
