Description

Think chewy oats, crispy rice cereal, sweet honey, and a rainbow explosion of sprinkles—these no-bake bars are edible sunshine. Whether it’s someone’s birthday or just a “needs-more-joy” Tuesday, these bars turn snack time into a celebration!


Ingredients

  • 1 cup Rice Krispies (or any crisped rice cereal)

  • 1 cup rolled oats (old-fashioned)

  • 2 tbsp rainbow sprinkles (jimmies), plus more for topping

  • ⅓ cup honey (or maple syrup for vegan)

  • ¼ cup unsalted butter or coconut oil

  • 1 tsp pure vanilla extract

  • Pinch of fine sea salt


Instructions

  1. Line & Prep: Line an 8×8 pan with parchment (overhang for lifting). Lightly spray if needed.

  2. Melt: In a small saucepan, melt honey and butter/oil over low heat until smooth. Remove from heat, stir in vanilla and salt.

  3. Mix Dry: In a large bowl, combine oats, Rice Krispies, and sprinkles.

  4. Combine: Pour warm syrup over dry mix. Fold gently but quickly to coat evenly.

  5. Press: Press mixture into the pan firmly using a spatula or measuring cup. Sprinkle more sprinkles on top and gently press again.

  6. Chill: Refrigerate uncovered for at least 1 hour.

  7. Cut & Store: Lift, slice into 10 bars, and store airtight (fridge for 1 week, freezer for 2 months).

Notes

  • Chocolate Chip: Add 1 tbsp mini chips after mixing.

  • Nutty: Add ¼ cup chopped almonds or pecans.

  • Birthday Cake: Mix in 1 tbsp funfetti cake mix before wet ingredients.

  • Dairy-Free: Use coconut oil + maple syrup.
