Ingredients

  • 2 eggs (or chia-egg substitute)

  • ½ cup maple syrup (Grade B for deeper flavor)

  • ½ cup unsweetened applesauce

  • 3 cups old‑fashioned oats

  • 1 tsp baking powder

  •  tsp cinnamon + ¼ tsp nutmeg

  • ¼ tsp salt

  • 1 tsp vanilla extract

  • 1 cup chopped peeled apple

  • Optional: ½ cup toasted nuts + coarse sugar topping


Instructions

  1. Preheat oven to 350 °F; line or grease a 12-cup muffin tin.

  2. Mix wet: Whisk milk, eggs, maple syrup, applesauce, and vanilla in a large bowl.

  3. Add dry: Stir in oats, baking powder, spices, and salt—mix just until combined.

  4. Fold in: Apples and nuts gently.

  5. Portion batter into cups; top with coarse sugar if desired.

  6. Bake 30–35 mins until golden and set (toothpick comes out clean). Rotate halfway for even baking.

  7. Cool 10 mins, then transfer to rack. Serve warm or pack them for later!
