Ingredients

  • 1 lb ground beef (80/20)

  • 1 large egg

  • ½ cup shredded cheddar cheese

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp salt + ¼ tsp pepper

  • 68 slices thin bacon

  • Optional: sugar-free ketchup, fresh parsley


Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with parchment strips.

  2. Mix beef, egg, seasonings in a bowl. Don’t overwork!

  3. Fill muffin cups: Press half the mix in each cup, add cheese, cover with more beef. Smooth tops.

  4. Wrap each mini with a bacon slice around the sides.

  5. Bake 25–30 mins until beef is 160°F and bacon is crisp.

  6. Optional: Brush with SF ketchup last 5 mins. Let rest 5 mins before serving.
