Born from a rainy-day craving and a beachy food memory, this dish is sweet, smoky, cheesy comfort that’s ready in under 40 minutes. Every forkful tastes like sunshine—perfect for busy nights, BBQ cravings, or just adding a little joy to your dinner table.


Ingredients

  • 4 boneless, skinless chicken breasts (½-inch thick)

  • 1 cup BBQ sauce (smoky or sweet)

  • 1 cup diced pineapple (fresh or well-drained canned)

  • 6 strips cooked bacon, crumbled

  • ¼ cup sliced red onion

  • 1 cup shredded mozzarella cheese

  • 2 green onions, chopped

  • Salt & pepper to taste

  • Olive oil spray (for pan)


Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13” baking dish.

  • Layer chicken in dish. Lightly season with salt and pepper.

  • Top with BBQ sauce, then layer pineapple, bacon, red onion, and cheese.

  • Bake uncovered 25–30 mins, or until chicken reaches 165°F internally and cheese is bubbly.

  • Garnish with chopped green onions and extra red onion for fresh crunch. Let rest 5 mins.

  • Go Pizza-Style: Add diced ham & cherries
