Applesauce Birthday Cake Protein Balls

  • Author: Harper Callahan
  • Total Time: 30 mins

Description

Born from a frosting-fueled flop and a fridge of pantry basics, these no-bake bites are soft, sweet, and secretly good for you. Packed with protein and brightened with sprinkles, they turn snack time into a little celebration—no candles or oven required. Whether it’s a lunchbox treat or a “you got this” moment, one bite brings the party!

Ingredients

Scale
  • 1 tbsp unsweetened applesauce

  • ¼ cup vanilla protein powder

  • 2 tbsp coconut flour

  • 1 tbsp granulated sugar (optional)

  • 1 tbsp confetti sprinkles (jimmies)

  • 12 tbsp unsweetened almond milk

Instructions

  1. Mix the Base: In a bowl, stir applesauce, protein powder, flour, and sugar. It’ll look crumbly—don’t worry!

  2. Adjust Texture: Add almond milk 1 tbsp at a time until dough is moldable like cookie dough.

  3. Add Sprinkles: Gently fold in sprinkles (don’t overmix).

  4. Roll & Chill: Shape into balls. Chill 20 mins to firm. Optional: roll in more sprinkles for sparkle!

Notes

  • Too wet? Add ½ tsp coconut flour.

  • Use sweet protein = skip sugar.

  • Store chilled up to 5 days or freeze for 3 months.

  • Swap coconut flour for almond flour (+1 tsp if needed).
