A buttery oatmeal cookie crust, tender apple filling, and a dreamy caramel drizzle make these the ultimate fall treat—for parties, coffee breaks, or just because you’re fabulous.

Crust:

  • 1 cup all-purpose flour

  • 1 cup rolled oats

  • ¾ cup brown sugar (packed)

  • 12 tbsp unsalted butter, softened

Filling (Homemade or Shortcut):

  • 34 apples, peeled & diced (or 1 can apple pie filling, chopped)

  • 2 tbsp butter

  • ⅓ cup brown sugar

  • 3 tbsp water

  • 1 tsp cinnamon + ⅛ tsp nutmeg

  • 1 tbsp + 1 tsp cornstarch mixed with 2 tbsp water

Finishing Touch:

  • Caramel sauce, for drizzling


Instructions

  • Preheat oven to 350°F (175°C). Grease a 24-cup mini muffin tin generously.

  • Make crust: Mix flour, oats, and sugar. Cut in butter until mixture is crumbly and holds when squeezed. Press 1–2 tbsp into each muffin cup, shaping into wells.

  • Bake crusts 10–12 mins, until golden. Cool 5 mins in tin.

  • Make filling (if using fresh apples): Sauté apples, sugar, butter, and spices in a skillet for 5–7 mins. Stir in cornstarch slurry, cook 1–2 mins until thick and glossy. Cool slightly.

  • Assemble: Spoon filling into crusts.

  • Bake again for 5–7 mins. Cool 10 mins in pan before removing.

  • Drizzle with caramel. Serve warm or at room temp.
