Ingredients

  • 4 Pirus apples, diced (or Granny Smith/Honeycrisp)

  • 500g butter-based puff pastry, thawed

  • 1 tsp ground cinnamon

  • 5 tbsp demerara sugar (or brown sugar)

  • 1 tbsp cornstarch (slightly heaping)

  • 1 tbsp honey (plus extra for drizzling)

  • 1 egg yolk + 1 tsp water (for brushing)


Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  • In a bowl, toss diced apples with sugar, cinnamon, and cornstarch. Let sit 5 mins.

  • Roll puff pastry into a 12×16-inch rectangle.

  • Spread apple mix evenly, leaving 1-inch at the top. Drizzle 1 tbsp honey.

  • Roll tightly, seal edge with water, and slice into 1.5-inch buns (10–12 pieces).

  • Place swirl-side up on sheet. Brush tops with egg wash.

  • Bake 20–25 mins until puffed and golden.

  • Drizzle warm buns with more honey. Cool 5 mins before devouring.
