What started as a fiery kitchen disaster turned into Harper’s signature weeknight win. Think juicy, spice-kissed chicken, golden halloumi, melty mozzarella, and tangy chilli jam all stacked in a toasted brioche bun. It’s everything you crave—made faster, cleaner, and way more satisfying at home. Let’s turn cravings into proud kitchen victories!


Ingredients

  • 4 Brioche Buns

  • 400g Chicken Breast, sliced or pounded

  • 2 tbsp Nando’s Marinade (or DIY substitute)

  • 120g Reduced-Fat Halloumi, sliced

  • 1 Pepper (any color), sliced

  • ½ Onion, sliced

  • 1 tsp Olive Oil

  • 4 Slices Mozzarella

  • 20g Chilli Jam

  • 20g Perinaise (or spicy mayo mix)

  • 10g Melted Butter (for toasting buns)


Instructions

  1. Marinate Chicken: Coat chicken in marinade. Let sit for 30 mins (or overnight for max flavor).

  2. Air Fry Chicken: Preheat air fryer to 180°C (356°F). Cook chicken 8 mins, flip, then 4–6 mins more until cooked through.

  3. Sauté Veggies: While chicken cooks, pan-fry peppers and onions in olive oil for 7–10 mins until softened and slightly charred.

  4. Cook Halloumi: Air fry or pan-fry halloumi for 3–5 mins until golden.

  5. Melt Cheese: In the final 2 mins of chicken cook time, top with mozzarella. Let it melt in the air fryer.

  6. Toast Buns: Brush bun insides with melted butter. Toast for 1–2 mins in air fryer or under grill.

  7. Assemble: Spread perinaise on bottom buns, layer chicken, peppers/onions, halloumi, and chilli jam. Top with the other bun.

Notes

  • Pat chicken dry before marinating—it helps flavor stick!

  • Use a meat thermometer (aim for 75°C/165°F) for juicy, safe results.

  • Don’t skip bun toasting—it holds everything together and adds flavor!
