Ingredients

4 Brioche Buns

400g Chicken Breast, sliced or pounded

2 tbsp Nando’s Marinade (or DIY substitute)

120g Reduced-Fat Halloumi, sliced

1 Pepper (any color), sliced

½ Onion, sliced

1 tsp Olive Oil

4 Slices Mozzarella

20g Chilli Jam

20g Perinaise (or spicy mayo mix)

10g Melted Butter (for toasting buns)
Instructions

Marinate Chicken: Coat chicken in marinade. Let sit for 30 mins (or overnight for max flavor).

Air Fry Chicken: Preheat air fryer to 180°C (356°F). Cook chicken 8 mins, flip, then 4–6 mins more until cooked through.

Sauté Veggies: While chicken cooks, pan-fry peppers and onions in olive oil for 7–10 mins until softened and slightly charred.

Cook Halloumi: Air fry or pan-fry halloumi for 3–5 mins until golden.

Melt Cheese: In the final 2 mins of chicken cook time, top with mozzarella. Let it melt in the air fryer.

Toast Buns: Brush bun insides with melted butter. Toast for 1–2 mins in air fryer or under grill.

Assemble: Spread perinaise on bottom buns, layer chicken, peppers/onions, halloumi, and chilli jam. Top with the other bun.
