Ingredients

Tzatziki:

½ cucumber, grated & squeezed dry

2 tbsp chopped fresh dill

1 tbsp lemon juice

1 garlic clove, minced

Greek Salad:

1 cup cherry tomatoes, halved

½ cucumber, chopped

¼ cup red onion, thinly sliced

⅓ cup crumbled feta

1 tsp red wine vinegar

Base:

1 cup uncooked jasmine rice

1 tbsp butter
Instructions
